MICROCLIMATE AND POSITION
Favourable growing conditions with good day/night temperature ranges during the final ripening stages.


WINEMAKING TECHNIQUE
The grapes are harvested by hand to select the best clusters.
Vinification takes place in stainless steel vats and then in wood.
The maceration process lasts two weeks at a temperature of between 26-28ºC.  The juice is pumped over four times a day and the caps manually punched to extract the colours and aromas from the skins. The final maceration phase takes place with the vat full to the brim. After the maleolactic fermentation process is complete, the juice is poured into small oak barrels to age for about two years. Before it is sold, it is further aged in the bottle.

ORGANOLEPTIC PROPERTIES BY VINTAGE

2003 - (Alcohol content 13.50% vol.) Bright ruby red with a deep vinous aroma that offers hints of humus, greens and dried flowers. There are scents of prunes, cherry and a hint of balsamic and tobacco.  In the mouth is it enveloping  and well structured, with compact tannins and a fine freshness.

2004 - (Alcohol content 13.00% vol.) Ruby red with darker reflections due to aging. A vinous nose, it has inviting hints of ripe red fruit (cherries, currants and berries) accompanied by a spicy pepper and vanilla undertone.  The aftertaste is full with a soft velvety finish.

2005 - (Alcohol content 14.00% vol.) Red with bright ruby red reflections. It is an evolved wine with a flowery nose that includes delightful hints of roses, even as a jam, and carnations, blended in with touches of cinchona and esters. In the mouth it is enveloping and long, soft at first and then vigorous once it reaches the middle. It has a soft and well-balanced progression and finishes with hints of plum and tobacco.

2006 - (Alcohol content 14.00% vol.) Deep ruby red with an intensely fruity aroma of red berries with hints of cherry.  The nose offers spices including cloves, coffee, wild berries, dried violets and marasca cherry jam.  In the mouth its components are well-balanced, long lasting and persistent, with a very pleasant, sweet and harmonious finish.
