MICROCLIMATE AND POSITION
Particularly favourable growing conditions with optimum day/night temperature ranges during the final ripening stages.

WINEMAKING TECHNIQUE
Dried on lattice or grids. Bio-chemical and physical changes. After having suffered cold air, humidity and dry periods, the grape becomes thin and wrinkled like the forehead of an old wise man. The cluster ages through dehydration, its sugars become concentrated and its aromatic composition complex.  They are then processed and their delightful concentrated nectar poured into oak, chestnut or juniper barrels to age for at least three years. 

ORGANOLEPTIC PROPERTIES
(Alcohol content 17.00% vol.) A golden amber colour, the wine has a nose of ripe apricots with hints of cocoa beans which show up in the warm and soft full bodied flavour . It has a persistence and balance like no other of its kind.
The 2004 vintage is quite dry, whereas the 2005 has a sweeter character.


PAIR WITH
Cantucci, any small and sweet dry baked goods.
Without doubt a wine for meditation.
