DISTILLATION METHOD
The rich pomace left over after making Vino Nobile di Montepulciano is manually distilled using a steam-powered discontinuous still with steam cauldrons made in the early 1900s. It is an homage to the most classic tradition of the Italian art of distillation.  The old copper of this still results in an elegant and clean spirit whilst the craftsmanship of the master distillers, as they work their magic, add all the expression inherent in the many complex aromas of the pomace.
